If you made
my brownies and still can't get enough, then you'll love these. Of
course, your hips and waist won't. But if you're looking for a crowd
pleaser where hording is impossible due to popular demand, this is
definitely a crowd pleaser. Just be sure to announce their setting on
the table so that you don't accumulate pouts and grumbles. Be sure to
stand clear of the frenzy.So, you're still here? Okay. It's your
pennance, not mine. This is for a single batch. Limits are set by the
mixing bowl and size of your cookie sheet and how often you want to
run batches through. I usually go quad for entertaining.
Ingredients:
1/2 cup butter or oleo
6 tablespoons granulated sugar
6 tablespoons brown sugar
1 egg, whole
3/4 teaspoon vanilla
1 1/4 cup sifted all purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda (optional)
1 cup chopped pecans
Preheat oven to 375š.
Cream softened butter and both sugars, beat in egg and vanilla. Add sifted dry ingredients and blend. Stir in nuts. Drop from a tablespoon onto an ungreased cookie sheet. Bake for ten minutes, until just done (soft bake.) Cool slightly before removing to prevent breakage. Remove with thin spatula and finish cooling on a kitchen towel. Drop on the next batch and keep cranking them out until your run out of dough. These are fabulous still warm, so if you make them in the presence of other, expect raiding without mercy.
