This is a
great way to start off a cold winter morning, or any morning where
hunger rules. These are much closer to hash browns than a battered
pancake, but they go a little further than plain old hash
browns.
Ingredients:
4 med. potatoes
1 med yellow onion
1 large egg, lightly beaten
2 tbsp. breadcrumbs
1/2 tomato, finely diced
cilantro
1 tsp. salt
1/2 tsp cayenne
Optional:
1/4 cup real bacon bits
1/2 cup crumbled pan sausage (precooked)
Grate finely the potatoes and onion,
dice tomato, drain off the liquid from bowl. Beat and add egg, add
breadcrumbs, chopped cilantro, salt and cayenne. Add pre-cooked bacon
bits or crumbled sausage if adding. Heat 1 tbsp butter on a wide
skillet at moderate heat, drop 4 heaping tablespoons onto hot skillet
to make 4 pancakes. Cook until browned, flip and brown other side.
Place under towel to keep warm. Add more butter and continue until
the mixture is consumed. Serve hot. Serves 4 (or fewer).
As a party breakfast, I recommend an 8X
batch or greater. A food processor is highly recommended. This is a
great recipe for first breakfast serving (when there are several
breakfast servings) where the pancakes can be served as the people
begin rising. Snooze and you lose.
