Ingredients:
1 cup sugar
dash salt
1/2 cup half and half
1/2 cup lime juice (preferably fresh squeezed or fresh frozen, but
reconstitued will do in a pinch)
2 eggs (whites)
bottle marichino cherries
Combine 3/4 cup sugar, dash of salt,
with 1 cup hot water in a pan. Bring to a boil, simmer 5 minutes.
Cool. Add 1/2 cup half and half and 1/2 cup lime juice. Mix lightly
and pour into bowl. Place in freezer until firm.
Beat 2 egg whites to soft peaks,
gently fold in the sugar and beat to stiff peaks. Break the
first mix into chunks with wooden spoon. Beat with blender until
smooth, keeping pan cold with a tray of ice beneath. Fold in egg
whites. Lightly marble with maricho cherry juice (cherries optional).
Return bowl quickly to freezer and freeze firm.
This recipe serves six rational people,
but it can easily be wiped out by two hooligans in nothing flat.
Double the recipe if you feel the need to make more. Double it again
if the need makes itself present. Beyond that, invest in a pad lock
for the freezer.
