Ingredients:
1 1/4 cup all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 tbsp sugar
1/2 tsp salt
1 beaten egg
1 cup buttermilk
2 tbsp vegetable oil
Beat the egg in a mixing bowl, mix in
buttermilk, then sift in the dry ingredients slowly. Add oil when the
mixture is consistent. Pour 3 inch circles onto heated griddle, flip
when bottom side is golden brown with darker veins, remove when other
side matches. Serve hot with butter and maple syrup, or other
toppings.
Not much I can say to embellish this
recipe, other than they do sure do satisfy in the morning, especially
a cool morning. I ate them for many years as a child, and I still
crank out a batch when the urge hits. To me, these are pancakes, and
nothing else quite takes their place.
