Ingredients:
4 egg whites (large)
1 tsp vanilla
1 1/2 cup sugar
3 cups flake coconut
dash of salt
Preheat oven to 325°. Beat egg
whites, dash of salt, and vanilla until it soft peaks.
Gradually add sugar and beat until stiff. Fold in coconut
until consistent. Drop (rounded teaspoon) onto greased cookie sheet.
Cook about 20 minutes until golden brown. Remove carefully with
spatula and cool on cloth covered counter. Makes about 3 dozen. Store
in an air tight container (if there are any leftovers) to retain
moisture.
I remember these as one of my favorite
summer treats, and I never could get enough of these chewy morsels.
The only work is beating the eggs long enough, so don't be in a hurry
to make them. Have a seat and stay with it until the final mixture is
stiff. Otherwise, the texture of the cookie suffers.
