Ingredients:
Guacamole:
4 ripe avacados, peeled and pitted
1/2 cup diced tomato
1/8 cup diced onion
2 tbsp salad dressing or mayonaise
1/8 cup chopped cilantro
2 tbsp lime juice
splash of hot sauce

pico de guillo (fresh preferable, Rotel or local take out is
acceptable)
shredded cheddar cheese (sharpness is optional)
flour tortillas
Mix the ingredients for the guacamole
and refrigerate until ready to serve. Cook black beans and spanish
rice. Serve while still warm on softened flour tortilla, applying in
this order: rice, mashed beans, cheddar, pico de guillo, guacamole.
Add some halbanero salsa for some real heat, if you have the nerve
and the stomach lining for it.
