Ingredients:
2 lb diced baked chicken
2 cups rice
4 1/2 cups water
1 8 oz can tomato sauce
1/4 yellow onion
1 tbsp jerk
1/2 tsp cayenne
1/4 tsp basil flakes
1/4 tsp garlic powder
1/2 tsp salt
dash lemon pepper
Bake unseasoned chicken at 350°
for 1 hour, cool, skin, and dice. Bring everything to a boil in an 8+
quart pot , cover and simmer until rice soaks it all up (15-20
minutes), stirring occasionally. Serve hot.
A very low maintenance recipe that
feeds four to six, with just enough burn to make people turn on the
ceiling fan. The recipe, like jambalaya, is open for use with a
variety of meats, sausages, and seafoods, as long as they're bland
enough not to conflict with the seasoning.
